Cellulase is a complex enzyme capable of decomposing cellulose, primarily comprising endoglucanase, exoglucanase, and β-glucosidase. These enzymes work synergistically to progressively hydrolyze cellulose macromolecules into glucose. As the primary component of plant cell walls, cellulose is difficult to break down using conventional methods. Cellulase achieves efficient degradation of natural cellulose by disrupting its crystalline structure. In food processing: Used for fruit and vegetable juice clarification (decomposing cell wall cellulose to enhance juice yield and clarity) and in brewing (aiding conversion of raw material cellulose into fermentable sugars to increase alcohol content). In the feed industry: Adding cellulase breaks down cellulose structures in feed ingredients (e.g., straw, bran), improving animal digestion and nutrient absorption while reducing feed waste. In the textile industry: Used in stone-washed denim processes to replace traditional pumice, achieving more uniform fading effects while reducing environmental pollution; In the paper industry: Assists in pulp bleaching, reducing chemical usage and improving pulp quality.
